Alpha MOS develops and markets Electronic Tongue (E-Tongue) instruments to analyze the taste of liquid samples or solids dissolved in liquids.
In a way similar to human tongue, the Electronic Tongue (E-Tongue) provides a global “taste fingerprint” of a complex mixture of organic / inorganic compounds.
These taste analyzers consist of three main parts:

  • a sampling system: generally an autosampler >>
  • a detection system: liquid sensors >>
  • a data acquisition and processing system: Alpha MOS proprietary software Alpha Soft based on powerful multivariate statistics and chemometrics.

new Latest Developments: Instrumental Quantification of Taste Attributes in Food Products

To answer specific needs in sensory analysis in the food industry, Alpha MOS has developped a module to rank products based on sensory attributes, with ASTREE Electronic Tongue.

  • This module is directly adaptable on existing ASTREE E-Tongue.
  • It proposes an easy-to-use method to assess taste attributes in food samples: sweetness, saltiness, bitterness, acidity, umami, etc.
  • It allows to compare and rank various samples on a relative scale of taste attribute intensity from 0 (low intensity) to 12 (high intensity).
  • It delivers results in easy-to-understand 1-D or 2-D graphs.
